Keto diet recipes in Marathi

Indian recipes are a huge source of inspiration for me. Now I don’t even want to go abroad for a holiday and I want to visit Mumbai just to see how they cook.


Chef Atul Kochhar is a legend. He recently tweeted a recipe from his book that I have adapted to make it a non-veg version. All I had to do was alter it a little to make it a keto recipe.

Here is my version of Keto kebabs:


Ingredients Of Keto Marathi Kebabs


1/2 tsp cumin powder, 1 tsp garam masala, 1 tsp red chilli powder, 1 tsp salt, 1 tsp lemon juice, 1/2 tsp black mustard seeds, 1 cup thickly sliced onions, 1/2 cup green peas, 1 cup finely sliced tomatoes, 1/4 cup plain flour, 1 tbsp red chili powder, 1 tbsp red chilli powder, 1 tsp garlic powder, 1 tbsp cilantro, 1 tsp black salt


Method


Wash tomatoes and rinse well, then take the slices off the tomato. Add the sliced tomato, green peas, onions and mix well.


Make a slit in the pepper and garlic and add the chillies and garlic. Add cilantro, black salt and red chilli powder and mix well.  Add some water if the blend is excessively dry. Then make little patties of equal size. Dip each patty into the flour and then roll it with a rolling pin into a flat circle. Take the same breadcrumb mixture, place the flattened pepper and garlic and onion mixture on it.


Make another spiral and roll it in flour. Do this in two directions. Make a rough ball of dough and keep it aside.


Sprinkle red chilli powder, garlic powder and red chilli powder over the entire dish.


Then grill in a preheated pan till the edges turn golden. While it is grilling add lemon juice, black salt, red chilli powder, green powder and black salt and black salt.


Pre-heat the griddle. Lay the kebabs on a greased pan and cook it on a medium flame. Do not let it cook on a high flame or it may crack. While cooking in the hot pan, taste the kebabs with the lemon juice.


Finally sprinkle the black salt over it and enjoy this keto marathi recipe.

Ingredients Of Marathi Mango Raita


1/2 cup green chutney, 1/2 cup fresh mango, peeled and chopped, 1 tbsp red chilli powder, 1 tbsp finely chopped ginger, 1 tsp garam masala, 1 tsp red pepper powder, 1 tsp garam masala, 1 tsp sugar, 1/4 cup coconut milk, 2 tbsp lemon juice, 2 tbsp olive oil, Salt, Water


Method


Make a fine paste with the above ingredients.


Gradually add sufficient water to make a thick player. Mix well and keep it aside. Make it into raita by mixing coconut milk and olive oil.


Then add the batter and mix well. Salt it well and keep it aside.



Keto Marathi recipes: Raita


Here is a Marathi raita that I personally make. You can taste the difference of it being keto or non-keto. This keto raita uses quinoa flakes.


Ingredients Of Keto Marathi Raita


100 gms fine quinoa flakes, 1 tbsp finely chopped garlic, 1 tbsp finely chopped onion, Salt and sugar to taste, 1 tbsp olive oil, 1 tsp lemon juice, Few black pepper powder, Few green chilli powder, Few black pepper powder, Few lime juice, Few green chilli powder, Few lemon juice



Ingredients Of Quinoa Flakes


1 cup water, 1 cup rice, 2 tsp garlic powder, Few green onions, finely chopped, 1 tsp green onion, finely chopped, 1 tsp green chilies, finely chopped, 4 tsp chili powder, Few salt to taste


Method


Mix the quinoa flakes, garlic, onion, green chilies, salt and sugar together. Make the filling by blending every one of the fixings well.


Remove from heat and put it in a thick saucepan with a lid. Make the filling over a hot stove.


Drain the quinoa mixture over a stainless steel bowl after 15 minutes.


Take the container off the oven and keep it to the side. To get the filling smooth you can add a little olive oil in the filling.



Keto Marathi Recipes: Coconut Ramen


The keto ramen includes a mix of cauliflower and tomato soup.



Keto Marathi Ramen Recipe


For this keto ramen you will have to make a marathi tart.


For the marathi tart recipe, add coconut milk and then heat it with olive oil. Then add the tomato paste and stir it till it turns a creamy texture.


Then add the cauliflower and stir it until it is cooked well. Then add salt and pepper powder and stir it again.


Slowly add the butter and stir it again. Add the lime squeeze and change the flavoring to taste.


Then add fresh mint and stir it once. Finish by adding cauliflower and stir it once more.


Keto Marathi Recipes: Buttermilk Bhel


The keto bhel recipe uses a mix of coconut and corn flour.


Keto Marathi Bhel Recipe


Ingredients Of Buttermilk Bhel


1 cup cauliflower, cooked, Half cup fresh corn, cooked and peeled, Half cup fresh peas, cooked and peeled, A pinch of salt, A pinch of turmeric, A pinch of black pepper powder, Few grated ginger, 2-3 garlic cloves, chopped, Few green chilies, chopped, 10-12 curry leaves, 4 tbsp butter, Few green onion, finely chopped, A pinch of sugar, Few lime juice, 1/2 tsp cumin powder, 1 tsp cayenne powder, 1 tsp red chilly powder, Few green chilli powder, A few lemon juice, A pinch of sugar, Salt to taste


Garnish: Tomato, ginger, garlic, green onion


Method


Mix the cauliflower, corn, peas and salt. Mix well and add butter and green onion.


Then add the curry leaves, ginger, garlic, red chilly powder, sugar and salt and mix well.


Then add the lemon juice, cumin powder and green chilli powder.


To make the batter, add half cup coconut and corn flour and mix it well.


Mix well, add a pinch of salt and make a thin batter. Then add coconut oil. Add milk and sugar.


Make sure that the batter doesn’t stick to the pan. Add the butter and mix well. Add the batter to a pan on a medium flame.


Bake it for a few minutes.
